Wahooo for hump day!
And an even bigger hooray for WIAW! Thank you Jenn for creating such a fun way to break up the week, and provide inspiration for me to actually attempt and change up my routine meals.
This week I am rather proud of myself for the fact that I have been pretty successful at meeting my goal of eating more whole foods. I have not relied on supplement bars, or eaten piece after piece of unsatisfactory diet breads. Instead I have consumed more fruits, yogurt, whole grain crackers with nut butter, and a very delicious crusty loaf of sweet potato bread Lauren was nice enough to be introduce into my life (Oh, yes…you will be seeing that later 🙂 )
I also cooked A LOT. We typically eat all our meals at home, or I pack our lunches, but in the past it was always similar items being paired together, or me taking the easy way out by throwing some veggies in the steamer with tomato sauce and that nasty diet bread I mentioned above.
So this week I have two super-easy meal ideas to share, in addition to a few products that are pretty fantastic.

I’m guilty of bringing the same old lame salad to work every, single day. Don’t get me wrong, I love hummus, I love turkey, and I love greens, but really, does a person need to have this same combination on a daily basis?
No! And lately I have actually found that I am pretty darn over having this for my midday meal. So although this is still a veggie based dish, it was a nice change to my typical fare. Not to mention it was super easy to throw together, and gets better as time passes and the veggies marinate.
Very Veggie Balsamic Chop
Makes 2-4 Servings
- Lots of Raw Veggies (I used what was in my crisper; carrots, green beans, cherry tomatoes, asparagus, and broccoli but feel free to add any others you enjoy!)
- 1 Perdue Perfect Portions Italian Marinated Chicken Breast (baked in the oven)
- 1/4 -1/2 Cup Newman’s Own Light Balsamic Dressing
- Chop all vegetables to desired consistency.
- Cut the chicken into chunks.
- Mix all together in a covered container.
- SHAKE, SHAKE, SHAKE until all contents are saturated.
- Leave in the refrigerator overnight, put over some greens and enjoy J
Easiest lunch ever, right?
My husband also had the veggie chop, but with some pasta, additional balsamic and a bit of grated cheese. His version also got pretty rave reviews 🙂
Usually we make this in the summer and add corn (HIGHLY RECOMMEND!), but for some reason, it has tasted especially good this week, even with the weather getting a bit nippy.
So since a cold front is moving in, of course I had to make something a little more appropriate.
Pull Out That Crock Pot Pulled Pork
Inspired by Hungry Girl
- 1 cup canned tomato sauce
- 1/2 cup reduced sugar ketchup
- 2 tbsp splenda brown sugar blend
- 2 tsp. garlic powder
- 1.75 pounds pork tenderloin
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- Turn the crock pot on low and add tomato sauce, ketchup, brown sugar and garlic powder.
- Rub the pork with salt and pepper and place in the newly mixed tomato-y goodness.
- Let the pork simmer in the pot for 7-8 hours, then pull it using two forks and let it marinate for a minimum of 30 minutes.
Again, this is one of the easiest things, ever, to make! AND you can use it in a plethora of ways; eat it on a bun, wrap or bread, mix it with mac and cheese, put it over a salad, scoop it up with some chips…The possibilities are endless!
It was definitely a sweeter variety of BBQ, but I really, really enjoyed it with a little Chipotle Tobasco over some greens. I also liked it coupled with Newman’s Own Low Fat Sesame Ginger.
Both were winning combinations and the latter is sitting in my lunch box at this current moment. The perfect meal for a cold and dreary afternoon such as this; can’t wait to dig in!
Now what I am about to share with you, I have to admit is pretty much all gone.
Lauren and I found it this weekend at the PA Gourmet Food Show, sold by a company called FreshaPeel Hummus.
They have a ton of varieties but when I saw the pumpkin, my choice was easily made.
After a small sample I would have literally purchased the company’s entire inventory, except for the fact that it’s so fresh it does not have a super long shelf-life.
Immediately after stashing my new treat in my bag, I was already plotting how I could incorporate it into my next meal.
It was pretty darn obvious when this next thing was picked up….
Homemade Sweet Potato Bread
Lauren was nice enough to take me to where she gets her artisan bread on a weekly basis.
She always seems to have a new and yummy looking loaf every few days and I was constantly pestering her about where she was finding such fresh and wholesome products. When I talked to her about our plans for Saturday she told me she had a surprise.
And an awesome surprise it was!!! My very own, basically right out of the oven, Sweet Potato Bread! Smeared with pretty much anything, come to think of it, even plain, the bread is fantastic, but with a little (or a lot!) of pumpkin hummus, it’s a totally delicious dessert!
If this tells you anything, and I mentioned above, most of the loaf and container of hummus, have pretty much been devoured.
The perfect mix of fall flavors has been causing some serious cravings, and like a good recovering girl, I have definitely been indulging.
Why not when its sooooo good? And food I feel great about eating? Right 😉
